5 Minute Lunchbox Pasta Salad

Make a really quick and easy pasta salad for lunchboxes in just 5 minutes

5 Minute Lunchbox Pasta Salad served in a bright red lunch box with fresh berries, yogurt and a sweet treat.

Pasta salad is a brilliant lunch to pack for kids. It’s got a good mix of protein, fat and carbs and you can also get some veggies in there too. Great to fill them up for an afternoon of learning.

And you don’t even have to spend time cooking up pasta in the morning. Use my cheat’s method with leftover pasta and you can whip it up in just 5 minutes.

So the next time you’re making pasta for dinner, just make a little extra and pop it in the fridge overnight.

How To Make Pasta Salad for Lunchboxes

The full recipe with ingredients and measurements is down at the bottom of this post but here’s some step by step photos which you might find useful.

  1. The night before place leftover pasta from dinner in the fridge.
  1. In the morning run it under cold water. This un-sticks the pasta.
  1. Mix with some olive oil, white wine vinegar and a little oregano to flavour.
  1. Add some chopped veggies, cheese, pepperami or any other additions.

It’s then ready to pop into a lunchbox and send to school with your child.

Description

Make a really quick and easy pasta salad for lunchboxes in just 5 minutes


Ingredients

  • 100g cooked pasta
  • 0.5 tsp olive oil
  • 0.5 tsp white wine vinegar
  • sprinkle of oregano
  • 40g cucumber
  • 35g cherry tomatoes
  • 30g cheese
  • 1 pepperami 

Instructions

  1. Rinse the leftover pasta under cold water and drain it well.
  2. Add to a bowl a mix in the olive oil, white wine vinegar and oregano.
  3. Chop up the cucumber, cherry tomatoes, cheese and pepperami and mix that in.
  4. Transfer to a lunchbox.
