Christmas Quesadillas

A fun Christmas themed lunch that kids will love – Quesadillas made with tortilla wraps and filled with cheese, turkey slices and pesto!

If you’re looking for a fun lunch idea that’s Christmas themed for the kids then you need to try my Christmas Quesadillas.

It’s just a simple quesadilla – filled with cheese, turkey and pesto – but with a cute Christmas tree cut out on top!

The first step is to use a Christmas tree cookie cutter to cut out 4 shapes from a large tortilla wrap.

Next, take a second tortilla wrap and add your filling.

Start with the grated cheese, then add the turkey slices and finally spread on the pesto.

It’s important to do it in this order so that you get that nice green colour on the Christmas tree cut outs.

Place the first tortilla wrap on top and then put the whole thing in the frying pan.

Cook for 2-3 mins on one side until the wrap is golden brown.

Then flip over to the pesto side and cook for another 1 minutes.

Cut the quesadilla into 4 slices.

Then use a small star cookie cutter to cut out mini star shapes from a yellow and red pepper.

Sprinkle these on top of the quesadillas and they’re ready to serve!

Ingredients

  • 2 large tortilla wraps
  • 60g grated cheddar cheese
  • 4 slices of turkey
  • 2 tbsp green pesto
  • yellow and red peppers

Instructions

  1. Use a small christmas tree cookie cutter to cut out 4 shapes from one of the tortilla wraps.
  2. Take the other tortilla wrap and sprinkle on the grated cheese.
  3. Add the slices of turkey and spread the pesto on top of the turkey slices.
  4. Place the wrap with the christmas tree cut outs on top and add the whole quesadilla to a large frying pan.
  5. Cook on a low heat for about 2 minutes until it starts to brown.
  6. Flip over and cook for 1 minute on the other side.
  7. Cut the quesadilla into 4 slices.
  8. Use a small star cookie cutter to cut out some star shapes from the yellow and red pepper.
  9. Place these on top of the quesadilla slices and serve immediately.
