Packed with chicken, hummus and veggies this Club Sandwich makes a really tasty and healthy  lunch recipe for kids!

 Anyone else find lunch times tricky in their house?

My kids would eat plain old ham or cheese sandwiches day in day out but if I’m being honest aren’t sandwiches just so quick and easy to rustle up! So in an attempt to vary their lunchtime recipes a bit I’ve made this really tasty but also very healthy Kids Club Sandwich.

I’ve used wholemeal bread in my recipe and spread it with a little hummus. For the filling I’ve added some chicken breast and also lots of veggies in the form of lettuce, tomato, cucumber and carrot. I used a vegetable peeler to make thin strips of the cucumber and carrot which gives the sandwich a delicious crunch but also makes it really easy for little mouths to eat!

I toasted the bread and also cut off the crusts because my kids always moan about them. Are yours the same?!!

Description

Packed with chicken, hummus and veggies this Club Sandwich makes a really tasty and healthy lunch recipe for kids!


Ingredients

  • 3 slices wholemeal bread
  • 1 tbsp hummus
  • lettuce
  • 1 large / 2 small slices cooked chicken breast
  • tomato
  • cucumber
  • carrot

Instructions

  1. Toast the bread and cut off the crusts (optional!)
  2. Shred the cucumber and carrot with a vegetable peeler.
  3. Spread the hummus onto the three slices of bread. On one slice add the lettuce and chicken breast. Add another slice of bread and then the tomato, cucumber and carrot. Finally top it with the last slice of toasted bread.
  4. Serve immediately.
