Make the most of your leftover Christmas turkey with this super easy turkey curry recipe that the whole family will enjoy!

Christmas Leftovers

Rarely a year goes by where we don’t have some form of leftovers from our Christmas Day Dinner. For us, there will almost certainly be some leftover turkey as well as some leftover veg. Unsurprisingly there never seems to be any leftover dessert though!

After all the cooking on the big day itself (even if you’ve prepped ahead with these Get Ahead Christmas Recipes), the last thing you probably want to be doing is spending ages in the kitchen preparing another family dinner.

And that’s where my easy Leftover Turkey Curry recipe comes in. You probably know I’m a huge fan of 30 Minute Meals, and not only will this simple recipe use up your leftover turkey and veg saving on food waste, but you can have this home cooked family dinner on the table in less than 30 minutes.

Curry For Kids

Curry might not necessarily be something you would associate with kids, but I’ve kept the spice levels in this recipe really mild so it’s a dish the whole family can enjoy.

Curries can also be a great way of introducing new flavours to children and we’ve a whole selection of Kid Friendly Curry Recipes to choose from that are mild enough for the whole family but don’t compromise on taste.

How To Make Turkey Curry From Leftovers

Fry onion, garlic, ginger in a pan and then add some curry paste.

You can also use curry powder but I prefer the flavour of curry paste. It’s much more intense.

Add tinned tomatoes and coconut milk and simmer that for a few minutes.

Then finally add the cooked turkey and a tin of chickpeas.

It really is that quick and easy to make!

The result is a delicious fragrant curry that’s still mild enough for kids to enjoy.

Description

Make the most of your leftover Christmas turkey with this super easy turkey curry recipe that the whole family will enjoy!


Ingredients

  • 1 tbsp oil
  • 1 onion, diced
  • 2 garlic cloves, chopped
  • ½ tsp ginger
  • 3 tbsp Tikka Masala curry paste
  • 1 tin chopped tomatoes
  • 1 tin coconut milk
  • 250g cooked turkey
  • 1 tin chickpeas, drained

Instructions

  1. Add the oil, onion, garlic and ginger to a large saucepan or pan and cook for 2-3 minutes.
  2. Add the curry paste and fry for another minute.
  3. Add the tinned tomatoes and coconut milk, bring to the boil and simmer for 5 minutes.
  4. Add the cooked turkey and drained chickpeas and simmer for a further 10 minutes.
  5. Serve with boiled rice, any leftover veggies and naan bread.
