No Bake Loacker Cheesecake

A delicious No Bake Cheesecake made with Loacker wafers and a biscuit base and topped with more wafers and fresh fruit. The perfect dessert to make this summer!

No Bake Cheesecake

If you are looking for a tasty and fun dessert or snack to make with the kids this summer then I have the best recipe for you. I’ve teamed up with Loacker to make this delicious no bake cheesecake packed with their delicious wafers. 

Kids always love to get involved in cooking up tasty treats and my cheesecake is perfect for them as it is really simple to make and requires no baking at all.

No bake cheesecake with loacker wafers

I used three different Loacker wafer products in this cheesecake:

  • Loacker Napolitaner for the base; and
  • Loacker Raspberry Yoghurt and Loacker Cremkakao to decorate the top

Feel free to use your favourite flavours though, as they will all taste equally as good!

How To Make The No Bake Cheesecake

The first step to making this delicious cheesecake is to blitz digestive biscuits, melted butter and Loacker Napolitaner together in a food processor. If you don’t have a food processor you can place them in a freezer bag and bash with a rolling pin, then mix with the melted butter.

Next, press the mixture into a springform tin. Finn loved helping me with this part!

Put the tin with the base mixture in the fridge whilst you get on with making the cream cheese layer.

Sift some icing sugar into a bowl with cream cheese and vanilla and mix well. In another bowl beat some double cream and then fold that into the cream cheese mixture.

Spread this on top of the biscuit base and refrigerate for 2 hours to allow it to firm up.

After 2 hours remove from the fridge and get creative with decorating! I used more Loacker wafers on top, along with lots of fresh fruit to make a really colourful and fun dessert for the whole family.

As you can see Finn was chuffed to bits with his efforts! He had so much fun making this with me and probably even more fun afterwards eating it!

This is the perfect dessert to enjoy this summer and is great for picnics, bbq’s and family get-togethers.

Description

A delicious No Bake Cheesecake made with Loacker wafers and a biscuit base and topped with more wafers and fresh fruit. The perfect dessert to make this summer!


Ingredients

  • 150g digestive biscuits
  • 150g unsalted butter, melted
  • 175g Loacker Napolitaner Wafers
  • 500g cream cheese
  • 2 tsp vanilla extract
  • 100g icing sugar
  • 200ml double cream

To decorate:

  • 8 Loacker Raspberry Yoghurt Wafers
  • 8 Loacker Cremkakao Wafers
  • Selection of fresh fruit

Instructions

  1. Add the digestive biscuits to a food processor and blitz until broken down.
  2. Add the melted butter, blitz again and then finally add the Loacker Napolitaner Wafers and blitz one last time until all the ingredients are well combined.
  3. Press this mixture into a round springform tin. I used a 23cm tin. Push the mixture down hard with the back of a spoon to make it as compact as possible. Refrigerate for 10 minutes.
  4. In a large bowl mixture together the cream cheese and vanilla with a spoon. Sift in the icing sugar and mix again.
  5. In another bowl add the double cream and whip until it has thickened but be careful not to over-beat it.
  6. Fold the cream into the cream cheese and layer this on top of the biscuit base.
  7. Return to the fridge for another 2 hours to firm up.
  8. Once ready, decorate the top with more Loacker Wafers and some fresh fruit and then cut into 8 slices.

Notes

This dessert is best eaten the same day it is made but it will keep in the fridge for up to 48 hours.

    there is nothing healthy about all this sugar and processed food. no oily fish for the brain.
