Slow Cooker Butter Chicken

Description

A delicious Butter Chicken Curry recipe cooked in the slow cooker. Mild enough for kids and so easy to make


Ingredients

  • 1 onion, diced
  • 2 garlic cloves, diced
  • 1 tsp chopped ginger
  • 1 tbsp mild curry powder
  • 1 tbsp garam masala
  • 1 tsp mild chilli powder
  • salt and pepper to taste
  • 1 tin chopped tomatoes
  • 50g butter, cubed
  • 600g chicken thighs
  • 75g greek yogurt

Instructions

  1. Add the onion, garlic, ginger, spices, tinned tomatoes and cubes of butter to the slow cooker and mix well.
  2. Add the chicken thighs and mix again.
  3. Cook on high for 4 hours or low for 6 hours.
  4. When it’s ready stir in the greek yogurt and it’s ready to serve with boiled rice and some veggies on the side.

Notes

This recipe is quite mild and uses only 1 tsp of mild chilli powder. However if your children are not very familiar with spices you can leave this out. Similarly if they enjoy spicy foods you can increase the amount of chilli powder used.

Leftovers will keep in an airtight container in the fridge for up to 2 days. This recipe can also be frozen for up to 2 months. Defrost in the fridge overnight and reheat until piping hot.
